Black Elderberry (Sambucus nigra L.) naturally occurs in most of Europe and has been introduced into various parts of the world for fruit and flower production. Elderberry is rich in phenolic compounds, including anthocyanins, phenolic acid,, and flavonoids. Polyphenols, known for their free radical scavenging (antioxidant) activity, are the most important group of bioactive compounds present in elderberry in relatively high concentrations. The high antioxidant activity of elderberry fruit and flowers is associated with their therapeutic properties. Elderberry has for a long time been used in folk medicine as a diaphoretic, antipyretic, and diuretic agent. In recent years it was also found to have antibacterial, antiviral antidepressant and antitumor and hypoglycemic properties, and to reduce body fat and lipid concentration. Due to its health-promoting and sensory properties, elderberry is used primarily in the food and pharmaceutical industry.

Function:

1.Elderberries are a low-calorie food packed with vitamin C, dietary fiber and antioxidants in the form phenolic acids, flavonols and anthocyanins. The flowers are particularly rich in flavonols.
2.Elderberry extract has been found to reduce the length and severity of symptoms caused by the influenza virus. 
3.Elderberry fruits, leaves and flowers are strong antioxidants. However, their protective effects in humans appear to be weak. Additionally, the processing of the berries and flowers can reduce their antioxidant activity.
4.Elderberry has some benefits for heart health, such as reducing cholesterol, uric acid and blood sugar levels. However, further research is needed to demonstrate if these effects are significant in humans.
5.Elderberry is associated with many additional health benefits, such as fighting cancer and bacteria, immune support, UV protection and diuretic effects.
